Shepherd's Pie


St. Patrick’s Day has always been an exciting day in this Irish household! We typically spend the day wearing green, celebrating with friends and family, and enjoying delicious food. One of our favorites is Shepherd’s Pie. It’s become a tradition to serve this every year, and I have finally mastered my recipe. Scroll down to check it out!

Ingredients for Meat Filling:

1. 1 lb. ground beef

2. 1 medium onion

3. 1 8.5 oz can mixed peas and carrots

4. 2 cloves minced garlic

5. 1/3 cup beef broth

6. 1 1/2 tsp Worcestershire sauce

7. 4 tbsp butter

8. Salt and pepper to taste


Ingredients for Mashed Potato Topping:

1. 4 medium potatoes, peeled and quartered

2. 1/4 cup milk

3. 5 tbsp butter

4. Salt and pepper to taste


Directions:

1. Preheat oven to 400°F

2. Place potatoes in large pot, covered with at least one inch of salted water. Bring to a boil, reduce to a simmer, and cook until soft (about 20 minutes).

3. While potatoes are cooking, melt 4 tbsps of butter in a large sauté pan over medium high heat. Add onions and cook until soft (about 6 minutes).

4. Add peas and carrots and cook for 2 minutes.

5. Add ground beef to the pan. Cook until no longer pink, and drain of any excess fat. Add salt and pepper to taste.

6. Add the Worcestershire sauce and beef broth. Bring to a simmer and reduce the heat to low. Cook for 10 minutes.

7. Once potatoes are done, remove them from pot and place in stand mixer. Using the whisk attachment on the lowest setting, combine potatoes with 5 tbsps of butter and 1/4 cup of milk. Add salt and pepper to taste.

8. Grease a 9x13in. baking dish. Spread the meat filling evenly across the bottom. Spread the potato topping over the filling.

9. Place in oven and cook for 30 minutes. Broil 2 minutes for additional browning if desired.

10. Serve warm and enjoy!
